Hello again! It’s Alicia from The Baker Upstairs, and I’m excited to share another sweet and delicious dessert recipe with you today. These snickerdoodle cookie bars are completely heavenly! They’re soft and chewy, with the perfect sweet cinnamon flavor. Best of all, they’re super easy to make!

Who else likes to travel for spring break? It’s one of our favorite travel times as a family, since it’s not too hot, and it feels like the start of the outdoor season. Last year we spent spring break at the coast and had a marvelous time, but this year we decided it would be fun to go back to our home state and visit family during the break. It sounded like a great idea at the time, but once we got the trip started, it seemed like everything that could go wrong, did. From a flat tire, to a back injury, to food poisoning, it was probably the least restful vacation I’ve ever had. We came home from our vacation totally exhausted! It was nice to spend time with family, of course, but I definitely came home with the feeling of needing a vacation from my vacation!

It also didn’t help that we returned from our weeklong trip to a nearly empty fridge, having done a great job of cleaning things out before we left. I was trying desperately to think of some treat I could make using our limited supplies to help cheer everyone up from their grumpy exhaustion. And voila, these snickerdoodle cookie bars came to mind! They use ingredients that I nearly always have on hand, and they are so delicious that they’re sure to put a smile on even the grumpiest little person’s face. I got to work making them, and in less than an hour, we were all happy munching on them and retelling all of our crazy adventures from our trip. If nothing else works, cookies are always a good way to turn around a bad day!

I adapted these snickerdoodle cookie bars from these lovely bars I saw on Averie Cooks, but I changed things around a little to suit my tastes. I love adding cinnamon to the cookie dough itself to bump up the delicious cinnamon flavor even more!

The full recipe is at the bottom of this post, but here’s what you’ll need:

  • butter
  • sugar
  • brown sugar
  • egg
  • vanilla
  • flour
  • salt
  • cream of tartar
  • cinnamon
  • cinnamon sugar

One of the things I love about this cookie dough is that you don’t need a stand mixer or a hand mixer to whip it up! Since the butter is already melted, it’s simple and quick to mix the dough together with a spatula or wooden spoon.

Once the batter is mixed, spread it in a 9 x 9 baking dish, and sprinkle it with cinnamon sugar. You’ll want a pretty even covering of cinnamon sugar, so each and every bite has a crisp cinnamon crust. Yum!

After the bars are baked, let them cool completely, then cut them into squares. I love the two distinct layers – the crispy cinnamon sugar layer on top, and the soft and chewy cookie layer on the bottom. These cookies have an amazing texture and are totally addicting!

These cookies have all the deliciousness of snickerdoodles, but they’re so much easier to make, since you don’t have to roll them into balls and coat them in cinnamon sugar. Just like the spring sugar cookie bars I shared a few weeks ago, they have all the payout with almost no effort!

These cookies will stay moist and fresh for several days if you store them in an airtight container, so they are perfect for lunch boxes and snacks. This recipe also doubles well if baked in a 9 x 13 baking dish, if you need cookie bars for a crowd. The bars will be a little bit thicker and will need an additional 10 minutes or so to bake. These are some of our favorite cookies, and we make them often since they are so easy!

Snickerdoodle Cookie Bars

These sweet and cinnamon snickerdoodle cookie bars are so easy to make and addictingly delicious!

Ingredients

for the cookie bars:

  • 1/4 cup Sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 350. Line a 9 x 9 baking dish with parchment or spray with cooking spray, and set aside.

  • In a large bowl, stir together the butter, sugar, and brown sugar, until combined. Mix in the egg and vanilla until well blended.

  • In a small bowl, whisk together the salt, cream of tartar, cinnamon, and flour. Pour the dry ingredients into the wet ingredients, and mix until combined. Spread the mixture evenly in the prepared pan.

  • Whisk together the cinnamon and sugar, then sprinkle the mixture over the top of the batter, covering completely. Bake 24-26 minutes, or until a toothpick inserted in the center comes out clean. Let cool, then cut into bars.

These sweet and cinnamony snickerdoodle cookie bars are so easy to make and addictingly delicious! They’re soft and chewy, and topped with a to-die-for cinnamon sugar crust!
