About The Ingredients

Chickpeas

Let's talk about which chickpeas to use when roasting. It's pretty straightforward, but you've got a couple of options.

  1. Canned Chickpeas: These are super convenient and what most people go for. They're already cooked, so you just need to drain them, rinse them, and they're ready to go. Great for when you're in a hurry or don't feel like dealing with dry chickpeas.
  2. Dry Chickpeas: If you've got a bit more time and want to start from scratch, dry chickpeas are the way to go. It is not possible to roast dry and raw chickpeas. You'll need tosoak them overnight, and cook them until they're tender. Then those cooked chickpeas are ready for roasting. Make sure to drain them before starting this recipe.

Olive Oil

This helps your seasoned roasted chickpeas get crispy and makes the spices stick. If you don't have olive oil, you can use another oil like avocado oil or canola oil. These oils have a mild flavor and can withstand the high heat of baking.

Spices

  • Salt:It brings out the flavor of the chickpeas and spices. You don't need much, just a sprinkle to taste.
  • Cumin: This one's a classic. Cumin gives chickpeas a warm, earthy taste. Think of the flavor in hummus or falafel – that's cumin doing its magic.
  • Paprika: If you like a little smoky flavor or want your crunchy chickpeas to look more colorful, paprika is your go-to. Cayenne pepper could be a good substitute.

What Other Spices Go Well with Chickpeas?

Chickpeas, also known as garbanzo beans, are incredibly versatile and pair well with a wide range of spices. Our chickpea seasoning in this recipe is simple. We use only two spices (paprika and cumin) besides salt, but the options are endless. Here are some ideas:

  1. Black Pepper: It adds a bit of heat and a lot of flavors.
  2. Turmeric: It makes your chickpeas bright yellow and adds a mild, kind of earthy taste.
  3. Chili Powder: Want some heat? Chili powder will spice things up. Just decide how spicy you like it and go from there.
  4. Garlic Powder: Almost everyone loves garlic, right? It makes chickpeas taste more savory and bold.
  5. Sumac: This one's a bit different. It's tangy, almost like lemon, and adds a refreshing taste.
  6. Thyme and Rosemary: These herbs give a sort of Mediterranean vibe. They work well if you're roasting your chickpeas.
  7. Cinnamon: This isn't just for sweet stuff. A little cinnamon can add a warm, sweet twist to your chickpeas.
  8. Brown Sugar: Speaking of sweet, a sprinkle of brown sugar can create a nice caramelized flavor when you roast the chickpeas.
  9. Spice Blends: Don't forget about pre-made spice blends. Things likechicken seasoning, Cajun seasoning, or even Italian seasoning can be really handy when making roasted spicy chickpeas.
  10. Tahini: Okay, it's not a spice, but it's great with garbanzo beans. Who doesn't love their combination in ahummus? So why don't we drizzle a little tahini over our roasted garbanzo beans?

  1. Start with the Oven: First things first, get your oven warming up. Set it to 200°C (that's about 400°F).
  2. Dry the Chickpeas: Before roasting chickpeas, grab a kitchen towel or some paper towels and pat them dry. You want them as dry as possible. This step helps them get nice and crispy.

  1. First Roasting Round:Once they're dry, spread the chickpeas out on a baking sheet. No need to oil them just yet.Pop them in the oven for 15 minutes. This starts the crisping process.
  2. Add Olive Oil: After the first 15 minutes, take them out of the oven. Drizzle some olive oil over them. Then, get your hands in there and mix them around. You want each chickpea to get a little coat of oil.
  3. Season Them Up: Now for the fun part. Sprinkle salt, paprika, and cumin over the chickpeas. Give them another good mix with your hands. Make sure every chickpea gets some spice love.
  4. Roast Again: Back they go into the oven for another 15 minutes. This second roast will really crisp them up.
  5. Check the Crunch: After 15 minutes, check them. If they're not quite crispy enough for you, give them another 5 minutes in the oven.

  4. With Grain Bowls: For some extra protein and crunch, add roasted chickpeas to grain bowls. They are great on ourwheat saladandbuckwheat salad.
  5. As a Side Dish: Serve them alongside your main meal as a flavorful, crunchy side.

How To Store Them

A lot of people have a misconception about how to store spicy roasted chickpeas. You shouldNOT place the chickpeas in an airtight container or bag. Cooked chickpeas, like all types of cooked legumes, should be allowed to breathe when stored.

When covering the oven-roasted chickpeas, it also causes them to sweat and lose all of their crispiness.

The best way to keep your chickpeas crispy during storage time is to simply place them in a container at room temperature without a lid. You can cover them with a sheet of paper towel or kitchen towel if you like. This allows them to breathe without losing their crispness.

When storing the chickpeas this way, it is highly recommended to consume them within 24 hours, but to be honest, these delicious crunchy chickpeas won’t even last that long!

When following this method, the chickpeas will last about 3-4 days, but will lose their crispness the longer they are stored.

How To Reheat Them

There are a couple of ways you can reheat these easy baked chickpea snacks.

Microwave:The easiest and quickest way is to heat them in amicrowave. Make sure you use a microwave-safe bowl or plate, and reheat them for roughly 1-2 minutes.

Stovetop:Place the chickpeas in a non-stick frying pan, add a bit of olive oil and allow them to reheat over medium-high heat. Make sure to stir them to prevent them from sticking or burning on one side. Reheating them by pan will take about 5-6 minutes.

Oven:Heat the oven to 350°F (180°C), place the chickpeas into a lined baking tray, and bake them for roughly 10 minutes or until fully heated through.

Our Tips

For making the best crispy and spicy roasted chickpeas, here are the most important tips:

  1. Dry Chickpeas Thoroughly: Whether canned or cooked, ensure your chickpeas are patted dry. This is key for crispiness.
  2. Season Well: Coat the chickpeas evenly with oil and spices for uniform flavor.
  3. Don’t Overcrowd: Spread them in a single layer for even cooking and crispiness.
  4. Watch the Time: Keep an eye on them, especially towards the end, to prevent burning.

FAQs

How do I get my chickpeas really crispy?

Dry them well, give them space on the baking sheet for even roasting, and do a second roast after adding oil and spices.

What if my chickpeas lose their crunch after storing?

You can quickly re-crisp them in the oven. Just heat them at a low temperature for about 5 to 10 minutes.

Are roasted chickpeas healthier than nuts?

Roasted chickpeas can be a healthier alternative to some nuts. They're lower in calories and fat but high in protein and fiber. However, nuts also have their own health benefits, like healthy fats. It really depends on your dietary needs and preferences.

How do you get chickpeas to absorb flavor?

To help chickpeas absorb more flavor, make sure they are thoroughly dry before you add the spices. The oil helps the spices stick and roast into the chickpeas, enhancing the flavor absorption. Also, letting them sit for a few minutes after roasting can help the flavors meld together.

How do you make chickpeas not gassy?

If you're using dried chickpeas, soaking them overnight and then cooking them thoroughly can help reduce gassiness. Rinsing canned chickpeas well also helps.

Can I make these in an air fryer?

Yes, you can! Preheat your air fryer to around 190°C (375°F). Once it's heated, add the spiced chickpeas to the basket in a single layer. Air fry for 10-15 minutes, shaking every 5 minutes.
